Family Favorite Poke Bowl
My kiddoes and hubby absolutely love this poke bowl! It's so simple and easy to make that its hard to even call this a "recipe." I love making poke bowls because you can incorporate as much vegetables as you want and the kids will still eat it. I think they are magical that way. lol.
Poke bowls are typically made with tuna however I don't like raw fish not even in sushi, I usually get a California roll or something with cooked shrimp so I used smoked salmon for this recipe. I have made it with barramundis fish (cooked) and with shrimp and we have loved it each time.
You can use any variation of vegetables you want and it will still taste really good. I like adding cucumber to almost every salad and meal as I can, they are well loved in our family and I know the kids wont complain about them. I also add some shredded carrots, green onion, cilantro, avocado, and tomatoes. You can add red onion, ginger, peppers, jalapenos, zucchini, and the list can go on and on.
To bring this dish over the top I add sesame seeds, shredded seaweed, and yum yum sauce which I get at Kroger.
I wont be very specific with the recipe because it can vary so much that its more of a suggestion more then anything.
Make rice according to the package and increase the amount to accommodate your family size. Chop up your veggies of choice and prepare your protein of choice or you can make this vegetarian.
Lay the rice on the bottom of the bowl and add veggies and protein in a pretty circular fashion (optional) Sprinkle the sesame seeds and seaweed on top and drizzle some yum yum sauce and there you have it!
